What’s in store for 2025? Well, I start a new job in January, so with an increased income, I’ll be able to enjoy more culinary delights. Some people spend money on nice clothes, fast cars or swanky holidays. For me, food comes before all these things, and I’m not just talking about the weekly shop, I’m talking tasting menus, food holidays and great street food. What do I want to eat in this New Year? I want to try things I haven’t eaten before; tripe broth, new cuisine, foreign delicacies to name but a few. As we move into a new year, it’s important to focus on what matters. To me this is enjoying myself and food is a huge part of that. Nothing makes you feel more at home than a great dish. Having a close friend who is a chef is a great privilege. When I lived in Lancaster he would often allow me to taste dishes on his tasting menus in order to receive feedback. What a joy! One of the dishes I tried was a brioche with truffle, wild mushrooms and parmesan foam. Incredible! Great hit of umami and a beautifully cooked brioche, wonderful creaminess and a salty kick from the parmesan foam.
Moving into 2025, I want to have one fine dining experience every month. This might seem like an expensive hobby, but if I spend on the things I care about and scrimp and save on the things I don’t I can make it work. What’s your passion? I don’t have a guilty pleasure, because I don’t think we should be ashamed of doing what we love. For me, 2025 is a great opportunity to try new things and enjoy some old favourites too.
